Is Chempedak (Artocarpus integer) even better than jackfruit?

Latin name and family:

Chempedak, cempedak is Artocarpus Integer and has many synonyms: (syn.: Artocarpus champeden, Artocarpus integrifolius). It is in the Moraceae family, which also belong to our friends Breadfruit, Breadnut, add more here.

It seems like in English we have a hard time deciding what to call it and how to spell it. Here’s a few similar spellings: Chempedak, Cempedak, Campedak, Champedak, Artocarpus champeden, Chempedak Utan, tjampedak.

  • Indonesia: chempedak, campedak (Malay), baroh (Lingga).
  • Malaysia: chempedak (cultivated), bankong (wild), baroh (Johor).
  • Burma: sonekadat
    Thailand: champada.

Characteristics of the fruit:

Chempedak looks like jackfruit but it has less spiky smoother skin and it is more cylindrical. The fruits may vary in skin color from green when they are young to yellow or orange as they mature. There are little hexagonal patterns in the small protrusions. The flesh casing (aril) is similar to jackfruit. There is a reddish or yellowish fleshy pod that surrounds each large seed. There may be anywhere from 15-400 seeds depending on the specific cultivar (PROSEA, 2016) .

Unlike, jackfruit the flesh is softer. However, the Cheena (Jackfruit x Champadek) is crunchier. The Cheena is the most widely known cross between a jackfruit and a champedak and has smaller fruits than their parents with a pleasant flavor. The fruit can measure up to 1 and ½ feet (45 cm) long and can weigh as much as 13.3 pounds (6 kg). Its fruity flesh is covered in a green, yellow or orange brown skin that smoother than a jackfruit.

How to use chempedak fruit

The flavor is complex. My husband describes it as having a taste similar to mango or durian. Other accounts compare it to banana, pineapple,  honey and nectar. Compared to jackfruit, the chempedak is sweeter. When they are ripe they are more aromatic than jackfruit, and almost as aromatic as durian.

Chempedak used as a vegetable

Like the jackfruit, chempedak can be harvested green or immature and used as a cooked vegetable. It should be treated similarly to jackfruit. It is a little bit of work to cut open the fruit and separate the flesh but it is well worth it for culinary diversity. Alternatively, the fuzzy or hairy leaves are also used in cooking.  Traditionally, the fuzzy leaves were used as a meat tenderizer (Z. Siti Balqis & A Rosma, 2011). And other accounts report the use of their immature leaves as a green in cooking.

Chempedek seeds

The artocarpus integer seeds make up almost 20% of the fresh fruit weight, so luckily they are edible!  Another plus is that Chempedak seeds are easier to process than jackfruit because their seed coat is thinner and digestible. The seeds are starchy and taste somewhat nutty. They can can be cooked, dried and turned into flour which can be a nutritious additive or partial flour replacement (Aziah et. al 2011). Or you can boiled them  (think fingerling potatoes) smoother them in a tasty sauce. In the past I have make veggie burgers out of jackfruit seeds.

Chempedak has many culinary applications. It is eaten fresh when it is ripe, fried with flour to make fritters. It can also be made into a pudding.

Harvesting & Storage

The fruit can mature in 3 months or more. You’ll want to harvest ripe fruit when you see changes in the skin color and when the stem starts to yellow. The stem should also break easily. After harvest they may be further ripened. If you store in a cool place you will extend the shelf life.

Artocarpus integer

If you are harvesting the chempedak ripe, then there should be no latex in the skin. However, if you are harvesting it green for use as a vegetable in cooking, you should try mess-preventative methods like jackfruit.

In most cases the harvesting season lasts about 6 weeks and closer to the Equator you may see two seasons.

Other uses:

Artocarpus integer is cultivated for fruit especially in Jamaica and Kenya. But it has several other uses, most notably as lumber. It’s wood is strong as teak, and suitable for some construction projects. Ropes can be made from the bark. And the yellow extract of the heartwood can be used in coloring dyes, most notably for clothes. It is also good for firewood because it has moisture-free hardwood.

Growing information

It is native to Southeast Asia and thrives in the lowland, humid tropics. It is a fast growing evergreen tree that can reach up to 80 feet tall (24 meters).

This tree can will do well at elevations up to 1,500 feet (450 meters) but have a harder time in elevations between 1,500 feet and 4,000 feet (1,200 meters).

The trees are monoecious (they have both male and female flowers). There is some scientific certainty that they are pollinated by gall midges that feed on fungus present on the male flowers (Sakia et al. 2000). But,  Orwa C et al. (2009) more broadly report that insects visit the male flowers in the night.

Growing tips for Artocarpus integer:

Once the tree is a few feet tall make sure it gets plenty of sun. Consider support plants like gliricidia which will provide some shade at first and then can be cut back as the chempedak tree matures. Gliricidia will also feeds the young tree with nitrogen.

These are not drought tolerant trees. They need consistent rainfall throughout the year, with at least a minimum mean rainfall of 50 inches (1,270 mm). Otherwise, regular irrigation is recommended.

Cempedak seeds are recalcitrant and should be planted from fully mature fruits and sown as soon as possible. Recorded germination rates are around 75%. Seedlings start bearing fruit after 3-6 years. rafting is a common technique for chempedak and will result in smaller trees and fruit set in 2-4 years. The seeds are relatively true to their parents so less cultivated varieties exist than other exotic fruits. Usually scionwood is gathered from reliable parent trees in the local area.

It is also possible to graft champadek on to jackfruit rootstock, possibly providing a hardier plant. Scion wood should mature but relative in size to the rootstock. Clefts grafts onto young rootstock seedlings (3-5 weeks). Grafted plants will needs a humidity bag and shade for the first several weeks.

In most cases the tree bears most of its fruit on the large branches and trunk. These are large trees and some farmers recommend pruning for ease of harvest. This is best done during wet warm seasons.

They are prone to Rhizopus rot like jackfruit. Prune trees to keep them well venitaled, do not allow water to pool and make sure you remove diseased fruits from the tree and surrounding area as the fungus will persist and re-infest the developing fruits.

How to process macadamia nuts at home

We are super lucky to have such an abundant fruit farm – but MAN! it is a lot of work to figure out how when to harvest, how to process and how to store the large variety of fruit we have. I’m writing this how-to guide on processing macadamia nuts at home as I’m dealing with my second annual harvest from a tree that was planted on the farm by the previous owners. It just started to produce last year (my 6th year here). So I’m guessing our tree is about 13 years old now. Another fun fact about mac nut trees, they self pollinate (almost all varieties at least), so you only need one to get a good fruit set.

Unlike many of my tropical culinary projects, this one may actually be worth the time considering how much macadamia nuts cost in the stores, even in Hawaii. Cassava flour on the other hand… that DYI is a labor of love. For me macadamia nut season is a time when I get to cozy up in the kitchen, put on my new favorite Spanish-Language series and crack nuts all night long.

How to process macadamia nuts at home

Harvesting Macadamia Nuts

  • Your macadamia nuts will drop from the tree when they are ready to harvest.
  • For ease in harvesting, it is good to mow around the tree on the highest setting regularly. Or, if your tree is an a shadded area with a lot of leaf drop, you can use a leaf blower to seperate the leaves from the shells.
  • I like to harvest them from the ground every 2-3 days, but you can let them sit as long as a week.

Husking the macadamia nuts

  • It is important to husk the macadamia nuts soon after harvesting them about 24 hours. This is because if left in their shell with poor oxygen flow, it will cause mold and make the husks harder to remove, increasing processing time. But, if more time goes by, you can still harvest, remove the half cracked husks, and we like to recommend a thorough cleaning of any mold in warm water first and then food grade hydrogen peroxide.
  • To husk them, I use my macadamia nut cracker. It usually takes one or 2 cracks to remove the husks. Place them on your drying racks.

Drying the macadamia nuts

  • If you have ever tried cracking a mac nut right away you will notice they stick to the shell and they sort of taste like coconut. To get that fatty macadamia nut you crave, you need to reduce the initial moisture content of the macadamia by airdrying it for 2-3 weeks. This can be done in a place that is out of direct sunlight and gets decent airflow. I like to dry ours on our screened in porches. I have the best results using trays with holes on the bottom. Specifically, I use trays from a previous dehydrator we had that broke. They are perfect for enhancing airflow and containing the nuts. I use a china marker to date the trays for easy tracking. Every few days I roll them around a little to get airflow to the different sides.
  • After the initial air drying, you will notice the nuts are more easily removed from the shell but parts still stick. You will also notice a change in color. Pictured to the bottom are mac nuts that have been air-dried about 3 weeks versus the picture on the top only a few days. Now, you need to dry them further at a higher temperature. This is best done in your dehydrator on a low "nut" setting of about 104° F for about 2 days.
    I find my Ivation dehydrator is actually perfect for this. The nuts fit perfecting into the wire mesh drying sheets. If you have extra space – evenly space out the trays so all the nuts get a lots of air.
    About 2 times a day it is good to roll them around a little to change their position. After 2 days you can increase the temperature to 130-150° F and check them every couple hours until the shell is very brittle and cracks easily. When the mac nut is perfectly done you can hear it rattle around inside the shell.
  • If you do not have a dehydrator, you can also use your oven on the lowest setting (mine is 170° F). But they will dry much quicker, which is not necessarily better. If they dry too quick, they may dry unevenly, change color, and they are prone to getting a brown, tough spot in the middle of the nut. This is the case especially when they are roasted and can result in a less desirable taste.

Cracking & storing the macadamia nuts

  • Once they are uniformly dry, cozy up and start the final cracking.
  • The raw macadamia nuts can be kept in an air tight container, but they are best stored in the fridge or freezer. You will also benefit from vacuum sealing them for prolonged life.

Roasting the macadamia nuts

  • You can roast them in the oven on about 275° F for 20-30 minutes, best done on wire mesh baking sheets (like the ones in my dehydrator). If you want them salted toss them in a small amount of oil and salt.

How to make homemade cassava flour (yucca flour)

Cassava is an excellent starch for the tropical diet. And making homemade cassava flour is a great way to store your crop with minimal space. My husband has been trying to grow cassava on our tropical fruit farm on Big Island for 6 years. But, every time the cassava is ready to harvest the wild boars come dig it up and eat it. Finally, we started planting cassava in our large garden protected by electric netting. This is the first year we have had multiple harvests. It takes a minimum of 6-7 months for smaller roots and for some varieties up to 24 months to harvest. Cassava grows readily from cuttings. How to reduce cyanide in raw cassava

Most how-to recipes for homemade cassava flour tell you to cook cassava pieces first and then grate them. I think this is quite silly. The authors may be worried about cyanogenic compounds (cyanide) in cassava. But if you ever cooked cassava you know it becomes starchy and sticky, and very hard to grate.

There several methods to reduce the cyanogenic compounds (cyanide) in cassava. If you eat these compounds raw they have a toxic effect. There are also varieties with low cyanogenic compounds. One method of reduction is cooking by boiling, steaming or baking. Soaking the cassava in water also reduces the cyanide. Industrial producers of cassava flour rely on the drying and milling process to reduce cyanide levels. In the more traditional version of cassava flour, they ferment the grated cassava to reduce it’s toxicity, and then dry.

Gari – a fermented cassava flour / granules

There is similar product to milled cassava flour, called Gari. Gari is staple in West Africa, in particular Nigeria which is the leading industrial producer of cassava flour. There, they grate Gari and ferment it for 3-7 days. Then they roast it and sift it into cassava granules. Their goal is to achieve a slightly fermented and sour taste while assuring that the cyanogenic compounds are decreased. West Africans use Gari as a side dish, a thickener, and as an ingredient on other dishes, desserts and more.

My method for making homemade cassava flour

This tutorial gives you a few extra steps to reduce the cyanogenic compounds in case you would like to be on the safer side. These steps are optional but if you have the time, they can enhance the quality of the flour. Basically, I soak the peeled cassava in water and hang/slightly fermenting it overnight or up to 24 hours before drying. As I am writing this I have 13 pounds of shredded cassava that have been hanging from my bathtub curtain rod for 24 hours. I actually find the smell really pleasing, sort of nutty.

This is basically a 2-3 day process depending on how much cassava you are processing, if you decide to ferment (and length of ferment) and what time in the day you start. I started with probably 20 pounds of freshly harvested yucca. It took me about and 1 1/2 to peel, core and grate the cassava. Then I hung the cassava in a mesh bag for 24 hours. My drying process took 8-10 hours and by that time it was bed time. Consequently, I kept the pilot light of my oven on to prevent it from re-hydrating or molding, and I “milled” it the next day.

Here is a few more tips:

You are better off processing cassava fresh, within 2-3 days of harvesting. I processed some of the left over cassava on day 4 and there was noticeable deterioration of the root, it started to become streaked, sort of blue and in some cases there was evidence of rot. Also, the ends of the roots which weren’t tapered and clean cut had started to mold.

You can peel and wash and leave in soaked water for a few days in the fridge if you are not ready to deal with the grating or processing.

The knife pictured below is hardly big enough to process really thick roots. For those I use a really heavy duty butchers knife / cleaver.

How to make homemade cassava flour

This step-by-step tutorial describes how to safely make cassava flour in your own home using a food processor and your oven or dehydrator.

Peel, wash and core the cassava

  • With a sharp butchers knife, cut the cassava into pieces about 2 inches long (this will make it easier to peel and core. If your cassava if freshly harvested you can wash the cassava before you cut it to avoid dirt all over your counter, but I usually skip this step and wash it after peeling.
  • Using a smaller knife like a paring knife, make a deep incision in the thick peel of the piece, working around the cassava remove the peel (it's pretty easy).
  • Wash the cassava and place it in a bowl/pot of cool water. This will aid in reducing the toxic compounds, while you prepare the remaining cassava
  • If your cassava is larger than 1 ½ diameter it will probably have a woody core. To ensure your end product is digestable, it is best to take action to remove this. Simply cut the 2 inch piece into 4 pieces and slice a "triangle" off of each where you see the cassava sort of change color and texture, almost like a ring of a tree inside.

Grate and ferment the cassava

  • Grate your cassava in a food processor with the grater attachment.
  • Is you choose to, you can ferment the cassava at this stage to get a slightly nutty and more pronounced flavor. Using a mesh bag, hang the cassava for 5 – 24 hours, moving it around every once in a while to aerate the surface areas.

Dry Cassava

  • If you are using your oven, set it to the lowest temperature (mine goes to 170° F) I Spread the cassava out in a thin layer on baking sheets and prop a spoon in the door to let air escape (or use lever that is meant for broil). Depending on how thin the layer is you may need to mix the shreds every few hours. Should be done in 5-10 hours depending on thickness*
  • If you are using a dehydrator, place on trays in a thin layer and dehydrate on the highest setting ~159° F. For even results you should rotate the trays 1-2 times. The top trays dry quicker than the bottom.**

Mill the cassava shreds

  • If you have a small batch you can try putting directly into your high speed blender, pulse and shake it up every few pulses to achieve an even texture
  • For larger batches I recommend, using your food processor to chop the shreds into finer particles and then process in your blender.
  • To mill in your blender, fill the blender 1/3 full and pulse the first few times before putting on high speed for about 30 seconds. Make sure to have your counters clean without clutter because the flour particles will get everywhere when you open the blender.
  • At this stage there still may be gritter particles. You can sift them out now or sift them out according to the recipe you use. I've made bread with 1/4 homemade cassava flour and have used the flour in veggie burgers and never noticed the gritty parts. But If I was making something from just the flour I would probably sift out the grits and re-blend. For best result, in a tropical climate store in airtight bag in the fridge or freezer.

Notes

*The last batch I did was 13# of shredded cassava. It took using both my dehydrator and my oven full in relatively thick layers (1/2 inch). The oven cassava was done after 7 hours. You can subtract time from this if you are doing a smaller batch with thinner layers. Be aware if you over cook the cassava you will be roasting it. Which may have a nice flavor depending on what you plan to use it for.
**For my dehydrator -again my layers were thick – and it took about 10 hours after mixing up the shreds a little and rotating the trays).

How to prepare fresh cassava or yucca root

Cassava or also known as Yuca or Yucca is an excellent root vegetables that grows easily in the tropics. The latin name is Manihot esculenta, and it is in the Euphorbiaceae (spurge family). Throughout the tropics it is grown for its use as a starch vegetable, cassava flour/tapioca starch, breads, tapioca, and it is also distilled into an alcoholic beverage.

As I write this article on how to cook fresh cassava – I am actually experimenting with it for my first time. I’ve lived on my husband’s farm on the Big Island now for 6 years but for the first several years any time our cassava crop was ready the wild boar population on our farm would devastate them. Finally, after putting a solar electric sheep netting farm around our huge garden we decided to dedicate some space to planting cassava. We planted it last spring and now the roots are huge!

Cassava has a compound called cyanogenic glycosides which are toxic. Cooking reduces it to safe levels. Cooking water should be discarded after cooking.

Cassava is rich in complex carbohydrates, iron, and fiber and is a healthy unprocessed food choice to incorporate into a balanced diet. It is also renowned for it’s effect on fertility and is thought to increase or cause hyperovulation, in turn increasing likelihood of twins. There is actually an entire industry based around cassava root as a fertility supplement although peer reviewed scientific articles seem harder to come by.

To prepare the fresh cassava root…

  1. Using a sharp butchers knife, cut off the ends of the root to make an even cut.
  2. Then, cut into about 2 inch size chunks, about as long as your fingers.
  3. With a pairing knife make an incision in the thick skin and remove peel to expose just the white interior of the root.
  4. And then cut in half twice, making four pieces as pictured below. Cassava has a hard, fibrous core. If the diameter is about a big as your fist, you’re going to want to consider cutting out the core as pictured below. You can also just cook it first and remove core later.
  5. You can cook cassava a few ways:
  6. You can steam, boil, or pressure cook cassava. After doing the inital cooking you can them do a shallow pan fry to make yucca fries, or use your air fryer.

If you want to get more creative try using cassava as a starch in a veggie burger recipe, like my Cassava Quinoa Burgers. I also use them as a starch in various pureed soups like a green bean and cassava soup, pumpkin and casssava soup, etc. I’ve even used them in place of potatoes in my breakfast fritattas.

Surinam cherry is easy to grow in the tropics

Latin Name and family:

Surinam Cherry’s latin name is Eugenia Uniflora. It is  in the family Myrtaceae and is native to Surinam, Guyana, French Guiana, southern Brazil, Uruguay and Paraguay.

There are several other names for it. In Hawaii, I’ve found it is usually called Surinam Cherry or Pitanga. Other english nicknames for Eugenia Uniflora are Cayenne cherry, Florida cherry, and pumpkin cherry. Sometimes people also call it Brazil cherry. This causes some confusion between Eugenia Uniflora (surinam cherry) and Eugenia brasiliensis (which is nicknamed Brazilian Cherry or grumichama see picture below).

Characteristics:

These small fruits are “ribbed” and have the shape of miniature pumpkins. They are around 3/4 to 1 1/2 inches (2-4 cm) wide. As it develops, the fruit turns from green to orange. And, when it is mature they will either be bright red or a dark purple/black.

Here in Hawaiʻi, many of us know of them as having two main varieties, the red kind (possibly the “Chamba”  variety) and the purple/black kind (most likely the“Lolita” or “Zill dark” variety).

Surinam cherry (Eugenia Uniflora)

Surinam cherry skin is thin and the flesh is similar to a grape. There are anywhere from 1-3 inedible seeds inside. These seeds stay viable for a about month and produce similar plants and fruits as their parents. See more below on Eugenia Uniflora propagation.

Surinam Cherry Taste and Culinary Uses:

The flesh inside Surinam cherry is slightly translucent. But it is also tinted orange/red and is extremely juicy. These fruits can be anywhere from acid and sour to semi-sweet. The skins have a notable tannin taste, especially if slightly under ripe. The darker purple/crimson (Lolita) variety is known to be sweeter and less astringent or resinous. The taste is tropical, similar to gooseberry, grape, and cherries.

Although they are an extremely resilient plant, surinam cherries are not widely available in stores. On rare occasions you may be able to find them at a farmers market. This is mostly because they have a very short shelf life; their quality degrades rapidly after picking. The fruits bruise easily and begin to ferment within a day or more. For this reason, most people eat them directly off of the shrub, as is. However, they are commercially farmed in Brazil. See harvest and storage below on how to prolong shelf life for personal or commercial use.

Still, if you have a decent harvest you can do many things with this particular fruit. The obvious include making a Surinam cherry jam or jelly. Similarly you could make chutney for serving with meat or fish. Some people have made syrups with it for dessert or cocktails and other have pickled the ripe cherries. In Brazil, they make vinegar, wine and liquor with it.

Harvest and Storage:

The fruiting season of Surinam cherry varies greatly by region. In Florida it may ripen February-March, and then again months later around September-November. In Mediterranean areas it may fruit in the springtime around May. Here in Hawaiʻi, Surinam cherry fruits several times throughout the year depending on exact climate and rainfall. It only takes 3 weeks from flower to ripe fruit.

The fruits are edible once they become orange-orange red.  But they will be less juicy, more firm and still somewhat resinous. Surinam fruit picked at this stage is best for processing (wine, jelly, chutney). It will have a longer shelf life during the harvest to end-product chain. Additionally, it is easier to remove the pits at this stage and still have intact flesh to process.

If you are going to eat them fresh, you should harvest them when they are bright red, or purple/black. They should have shiny undamaged skin. They should also easily separate from the stem during harvest. In both cases many resources suggest picking them 1x/day or even 2x/day to get a decent Surinam cherry harvest. Please note, to extend shelf life, refrigerate immediately after picking and the store them in the fridge in vented containers.

Surinam cherry health benefits:

Surinam cherry has a relatively high Vitamin A and Vitamin C content. They are also high in iron, calcium, niacin, and some B complex vitamins. Its dark red color is indicative of its antioxidant content: some of which are lycopene, beta-cryptoxanthin, gamma-carotene, and rubixanthin. The purple varieties contain anthocyanin – another potent antioxidant found in blackberries, blueberries etc.

Its traditional use as a medicine comes mostly from its astringent and antiseptic qualities. In addition to the health benefits of the fruit he leaves contain various properties and an essential oil which includes turpentine, citronella & cineole.

Concoctions from the fruit and or the leaves may help clearing symptoms of stomach upsets (diarrhea), fevers, respiratory problems and colds.

The leaves’s essential oils can repel flies and other insects. (Traditionally, the leaves were stripped and laid on the floor of shelters, as you walk on them and bruise them their essence repels flies.)

There are clinical studies showing that Cineole helps patients with pulmonary issues. Specifically, it helps to relieve inflammation of the mucus membrane enabling better breathing.

Contraindications & Toxicity

Do not eat the seeds, they are very resinous and may cause gastro-intestinal upset. People with sensitive respiratory passages have reported irriation during pruning of the Surinam plant.

 Growth patterns:

Surinam is a tropical tree/shrub that can also thrive in Subtropical locations. It can survive temperatures as low as 20 degrees Fahrenheit and altitudes as high as 5,000 feet (in Hawaii). Surprisingly, many people grow them as a hedge plant or ornamental. They can range from 8-20 feet tall (2.44-6.1 meters) and spread out 5 to 15 feet (1.52-4.57 meters).

They are somewhat slow-growing. However, most seedling plants will still start to fruit after 2-3 years. Occasionally they may take as long as 5-6 years to fruit. For hedge plants, you want to space them 2-5 feet apart. Otherwise spacing them 10 feet apart is sufficient.

These resilient plants are also very tolerant heat and many types of soil (except salty soils). They also like full sun and adequate amounts of water. This is one reason why they are considered invasive. For example, in South Florida they started taking over other indigenous species. They also naturalized in Bermuda and formed dense thickets of a monoculture forest.

How to plant surinam cherry seeds

The seeds are recalcitrant – you cannot store them for longer than a month. To plant, simply separate the seeds from the flesh and place in a pot with well draining soil and consistent moisture. The seeds will germinate in 3-4 weeks.

Grafting and air-layering are less common propagation methods, but are used in countries like Brazil where surinam cherries are commercially grown. Cleft grafts are common and they may also be planted as seedlings in the ground and later “top worked” with a superior variety.

A small young tree will bear around 6 pounds of fruit in a year while a mature large tree may bear up to 25 pounds a year.

Rollinia deliciosa – the lemon meringue pie fruit

Rollinia could just be your new favorite fruit. For newbies with the  annona fruit family,  this fruit may genuinely surprise you. It’s got soft but spiky nubs and custardy, bright and sweet jelly like flesh. Sometimes it take a few tries to turn fruit skeptics into fans. For others like me, it was love at first sight/taste. Rollinia is SOOOOOO easy to grow in wet Hawaiʻi (and other tropical locations). It fruits from seed in as little as 2-3 years and may fruit multiple times a year for a staggered harvest.

Taxonomy of rollinia deliciosa

Rollinia Deliciosa or extremely similar Rollinia Mucosa. This fruit is known most commonly in Hawaii as Rollinia and in Brazil as Biriba.  There is a lot of debate among taxonomists about differences in these possible species (deliciosa v mucosa). More recently, taxonomist have chosen to forget their differences (mostly seen in the size and shape of the soft nubs on the outside and slight variations in flavor). They’ve given a new scientific name to them: annona mucosa – but this name has not be universally accepted. So, it seems like for the time being you can research R. deliciosa, R. Mucosa or A. Mucosa and find information on pretty much the same fruit.

Other common names for rollinia include: biriba, amazon custard apple, wild sugar apple, Fructa da Condessa.

Related fruits

Also under debate is whether this delicious fruit is truly in the custard-apple or annona family (annonaceae).  Still, taxonomists consider it a relative to other annonas like the Sugar apple (A. squamosa), cherimoya (A. cherimola), soursop (A. muricata), custard apple (A. reticulata), pond apple (A. glabra), ilama (A. diversifolia).

Rollinia fruit characteristics

Rollinia looks like an alien fruit. The flesh is a soft, gooey or jelly-like white pulp.  It has a white core and several dark brown, elliptic or seeds. The inside is creamy and soft, with very few fibers. The fruits vary greatly in size and shape and can weigh up to 8 or so pound.

The taste is a lemony custard- flavor, like lemon meringue. It is eaten fresh but is also made into raw desserts, ice cream, smoothies, etc. In Brazil it is fermented to make wine. Once rollinia is cut the flesh oxidizes quickly, it will also temporarily stain white dishes.

Contraindications

Importantly, research shows that the seeds have insecticidal properties and are poisonous to humans. Do not eat the seeds from rollinia or any other fruit in the Anonaceous (Annona) family. Be extremely careful when separating the flesh from the seeds for pureeing or putting in smoothies.

Rollinia Deliciosa or Rollinia Mucosa Harvest and Storage

Generally, rollinia is considered to have a short shelf life. The fruit ripens from green to yellow and can be picked early when they start to turn yellow. Clip the fruit leaving some stem. They still they may take approximately 4-7 days to ripen. You should try to eat it before the soft nubs completely blacken. Once the nubs turn black, the flesh inside turns more translucent and mucosy. Many find it is less desirable at this stage and should be eaten in the next day or two before it starts to ferment.

For picking for market, you can try picking the fruit at the very first sign of yellowing. Also, be careful with storage. The fruits are vulnerable to bruising even under their own weight. Store at room temperature on top of cushioning such as bundled newspaper or bubble wrap. Additionally, you may store rollinia in the refrigerator to extend the shelf life a few more days. But, be aware,  cooling the fruit after harvest can extend the shelf life but the skin is more likely to turn black.

Health Benefits of Rollinia

The rollinia fruit is a refrigerant and analeptic (stimulates the central nervous system). Also, due to its vitamin C content (73% RDI per 100g of Vitamin C) it is considered an antiscorbutic (effective against scurvy). The powdered seeds may be remedy for enterocolitis (inflammation of both the small intestine and the colon), but as mentioned above the seeds are also toxic to humans. Still, research is being done on Rollicosin, a new Annonaceous acetogenin, to develop a potential anti-tumor agent. Additionally, in traditional medicine it is used as an anti-pyretic (to reduce fevers), a restorative and general tonic.

100 grams of rollinia has 80 calories, 2.8 grams of protein, 23 grams of carbohydrates, 2.1 grams of fat, 1.3 grams of fiber. It also contains Vitamin B1 and B2, Vitamin C, phosphorous, iron, niacin, and thiamine.

Growth Patterns of the Rollinia Tree

The first record of rollinia in Hawaii is from the 1930s. It is thought to have originated along the Amazon in Brazil, although it was also discovered in early Mexico, Peru, and Argentina. It thrives in humid, tropical lowlands.  In Hawaiʻi it thrives in wet, humid locations at 300 feet to 3,000 feet elevations. Also, rollinia prefers heavy soil, full sun and an acid pH.

These trees grow fast, as much as 10 feet a year (up to about 40 feet). They can tolerate of heavy rains, but not drought. In fact, they prefer locations with consistent rainfall throughout the year. They appreciate large mulch rings or organic matter for good fruit set.

In lower elevations in Hawaii, less than 1,000 feet, they may fruit several times a year or throughout the year. At higher elevations they are more likely to fruit in the fall only. Mature trees may put out anywhere from 25-100 fruits a year. But the average range is more like 30-50 fruits per year per mature tree.

In Brazil, scientists found 4 species of beetles that pollinate the fruit flowers. But only about a third of the flowers set fruit. This happens about 55 days after seeing the blooms.

Rollinia is most commonly propagated by seeds because they grow true to type. Seeds may take anywhere from 3 weeks to 2 months to germinate, with about 80% success rate. To speed up the germination process you can try soaking them in water for 12-24 hours, or scarification. Like most fruit tree seeds it is good to sow them in partially shaded and wind protected nursery location.

Grafting and air layering can ensure consistently high yielding varieties. Scale and mealy bugs may be problems, as well as fruit fly.

How to cook jackfruit (green) straight from the tree

I am not a vegetarian (currently), but today I woke up, completely “meated out”.  Sick of my same old chicken, turkey, beef dinners. Then I decided today, I am going to cook and eat jackfruit. We have a jackfruit tree that is already fruiting on our young exotic and tropical fruit farm on the Big Island of Hawaii. Unfortunately, the variety, Ziman Pink is extremely prone to “rust” or browning and rotting out before they are completely ripe. We are contemplating cutting the tree down, but then we realized if we just get into the flow of cooking green jackfruit (before they get the rust), maybe we can keep the tree for a few more years while our superior varieties of jackfruit trees we have planted mature to fruiting age. I made jackfruit curry once before with my brother, almost 7 years back. We picked a jackfruit out of the Napali Coast trail on Kauai and checked it in our luggage (actually a cooler) back to Honolulu. Impatient for it to ripen, and hearing about jackfruit curry we decided to give it a try. I don’t remember much, but I do remember it was a messy pain in the butt to cut open and it was DELICIOUS, textureful experience. Since then Jackfruit has popped up all over the web, trendy cafes, health food stores. You can find it canned in asian grocery stores or in “international aisles” in major supermarkets. The canned versions come either syrup (ripened sweet jackfruit) or in water or brine (green jackfruit). After my experiment today, I understand why even adventurous home cooks prefer to buy it canned.

You will need a pressure cooker to follow these directions. I highly recommend this simple pressure cooker; Presto -01370 8 Quart Stainless Steel

I searched the internet this morning trying to remind myself how to cook and eat jackfruit when it is green to use in recipes. I found some information (which I follow and describe in my next section), but I found it…lets say lacking in essential in tips and pointers.

tips before you cook jackfruit:

  1. From harvest to cooking wear a shirt and shorts you absolutely don’t care about – many parts of you will get sticky with virtually non-removable sap during the process.
  2. Don’t harvest jackfruit with your favorite knife, blade, machete, it will just be another tool to thoroughly clean of latex/sap that comes from the stem and core of the jackfruit. You can snap off the stem near the top of the fruit. It will sap! Put it down on the ground and let it drip the latex for a few moments. Don’t hold it close to your body, arms, etc. Don’t put it in your car, or wheelbarrow.
  3. Before you cook jackfruit, definitely lay down newspaper, flat cardboard, thickly layered scrap paper etc on a large cutting surface (skip cutting board and go straight to thoroughly (news)paper lined countertop.
  4. Thoroughly oil your sharp knife, your hands and have (rubbing) alcohol, dish soap and a steel dish scrubber on hand.
  5. Be very careful with your slippy hands and knife while you cut (and wrestle) the jackfruit, getting through the center core is the hardest. I had to hug my jackfruit while I firmly cut into it, getting latex all over my shirt.
  6. Cleaning tips! Use a combination of alcohol, oil, dish soap and water and keep trying until it is not sticky any more.

How to cook jackfruit for use in recipes:

  1. Harvest or buy a green jackfruit (not ripe – no sweet smell, not hollow when tapped, doesn’t give to pressure of your thumb.
  2. Set up your station
    1. Lay out newspaper, flat cardboard, thickly layered scrap paper on countertop.fresh green jackfruit
    2. Get out a cooking oil (cheapest you have since you won’t be eating it) for oiling knife, hands and cleaning.
    3. Oil your sharpest biggest knife (cutting through center) and a smaller knife with serrated edges (for cutting out inner core)
    4. Get your cooking station set up….either:
      1. a pot or two of water boiling. Add a splash of oil to the water to discourage the latex from sticking.  (approx 45 minute cook time)
      2. use a pressure cooker. The pressure cooker is supposed to take less time over all (10 minutes) of actual cooking – but this time doesn’t include time getting it to pressure (5 minutes) and letting it naturally cool down and release pressure (10 minutes).

Today I tried both methods. I think in the future I would probably just keep it simple and boil the jackfruit. The pressure cooker took a long time to heat up, and release steam. My end result was actually pink (remember the variety of Jackfruit I used was Ziman Pink), not sure if it is due to the variety or to other compounds being released under pressure cooking.

5. Start making the cut. Go slow, make firm cuts, hold the jackfruit to keep it steady as you break through the toughest part, the core. Cut either lengthwise (or the other way) which ever is safest for your oily hands and knife.

6. Cut out the “pithy” core. This is the part I did with a small serrated knife. It is kind of like carving Jack-o-lantern, but harder, slipperier, and stickier. Leave the skin on and the seeds in.

7. Drop in pot either pressure cook or boil about 45 minutes for boiling in a regular pot, about 10 minutes from when pressure is reached in your pressure cooker.

8. Once it has cooled, strain, peel skin, discard or save seeds and their outer coating (for other recipes), and set aside edible jackfruit portions for use in meals.

9. Once cool you can freeze for a few months for future use.

Jackfruit – the trendy vegetarian meat replacement

Jackfruit is one of the first tropical fruits I feel in love with. It looks like a monster baby egg, but jackfruit taste is so pleasant they modeled a gum flavor after it. It is also large, spiky, and a chore to open up. But the jackfruit is a powerhouse of nutrition, flavor and calories. You can eat it raw when it is ripe (sweet) or  cooked green (aka under-ripe) as a vegetable often used as a meat replacement in many recipes. Below you’ll find more information on jackfruit, the world’s largest tree fruit. You will also learn how to harvest and eat jackfruit, both raw jackfruit and how to cook jackfruit when it is green.

Jackfruit taste, harvest, storage and growing information

Latin Name and family: Artocarpus heterophyllus, family: Moraceae (mulberry, fig and breadfruit family).

Other names: jak-fruit, jak, jaca, nangka (Malaysia and the Philippines); khanun (Thailand), khnor (Cambodia), mak mi or may mi (Laos), mit (Vietnam).

Characteristics:

Jackfruit is the largest fruit that comes from a tree. The fruit itself can range from 8 inches to 3 feet (or 20-90 centimeters) long and 6 – 20 inches (15-50 cm) wide. The weight ranges from 10 lbs to an average of 50-60 lbs. Howeer, some people have recorded them weighing up to 110 lbs. The outside of the skin has hard little points connected to a thick wall.

Inside jackfruit the main edible portions are like large “bulbs” surrounding the seeds. These bulbs have a somewhat stringy flesh. The seeds inside are light brown and are usually 3/4 inches to 1 1/2 inches long and about 1/2 to 3/4 inches thick. The seeds have a thin white membrane outside. One jackfruit can contain up to 100-500 seeds inside each fruit. When a jackfruit is fully ripe it has a strong odor. Inside, the pulp of the fruit smells fragrant and tropical, like pineapple and banana.

Jackfruit in the Kitchen:

It is rumored that the flavor for Juicyfruit gum was modeled after the jackfruit. Now, jackfruit is gaining popularity worldwide especially for its use when it is unripe, it is being marketed as a vegan or vegetarian meat substitute. The unripe flesh can be cubed and boiled or cooked similar to breadfruit or plantains. Some people say that it tastes like chicken or pork; it truly soaks up the flavors of the sauces in which it is cooked. In the United States you can now find green (unripe) jackfruit in several health food cafes served in dishes like Vegetarian pulled pork sandwiches or tacos and in stores as prepared and frozen meat replacements. It is also sold in cans in water or brine. The seeds are also edible and a great source of protein when they are boiled and the hard shells removed.

Ripe jackfruit is a also a wonderful edible experience. The ripe pulp is great eaten raw in its natural state. It is also available canned in many markets. It is sweet, fruity, tropical, but unlike any one other fruit. Many people say that jackfruit has hints of pineapple, mango, banana, but again, these are just common tropical flavors that may relate to it.  You must get a chance to try ripe jackfruit for yourself. The canned jackfruit in syrup does not do this super fruit justice. Many people distinguish between two jackfruit types: crunchy and soft. Both are great and yield slightly different properties in their culinary applications.

 

Jackfruit culinary applications

My first experience with unripe Jackfruit was a when I cooked a green jackfruit curry. Many recipes use canned young jackfruit. But I highly recommend tracking your own unripe jackfruit down and experimenting. Another common recipe these days is green jackfruit “pulled pork” or barbecue jackfruit.

Jackfruit has a sticky latex when you pierce the skin.  It can be quite messy so it is highly recommended that you oil your knife and maybe even your hands a tiny bit before cutting into it. You may want to even open it in a shallow cardboard box or on top of newspapers to help with the mess.

To prepare green jackfruit, cut it into manageable sections, leaving the skin on and boil it for 45 minutes or pressure cook it for about 10. Once it has cooled, you can remove skin and seeds and use the edible pods cubed or separate it into stringy bits for recipes like vegan steak or pulled pork.

As mentioned previously, the seeds are also edible once cooked. However, it is a pain to remove the plastic-like outer layer of the seed. I have made a really yummy jackfruit seed vegetable burger but it did take a fair amount of work. You can also roast and dry seeds and turn them into a flour.

The ripe pulp may be used in fruit salad, fruit smoothies, etc. Moreover, both the green or ripe pulp can be frozen or canned.

Jackfruit Harvest and Storage:

The fruits can mature anywhere from 3 to 8 months from flowering. You can usually tell it is ripe because they change from light green to yellow-brown, but be sure to harvest before it is quite brown and spots appear. The “spines” on the fruit may yield to pressure of your thumb and the fruit should sound hollow when tapped. Jackfruit turn very brown and deteriorate quickly after ripening (2-4 days). Ripe fruits can be kept a few weeks with adequate refrigeration and you can keep the edible flesh frozen for a few months once it is separated from the rind and the seeds.

Toxicity: Ripe jackfruit may act as a laxative if too much is eaten. The raw seeds are indigestible and need to be baked or boiled.

Health benefits:

A study published in the journal Plant Foods for Human Nutrition indicated that the pulp of jackfruit is a natural source of antioxidants that protect cells from free radical damage. This means the fruit can help slow down skin aging and can even assist in repairing damaged molecules, like DNA.

Another study published in The Ceylon Medical Journal categorized jackfruit as a low-glycemic index fruit, which is attributed to its dietary fiber content. Consumption of unripe jackfruit can even be used to fight high blood sugar level, according to a Sydney University Glycemic Index Research Service study.

Growth patterns:

Jackfruit needs humid tropical or near tropical climates for abundant fruit production. These trees have been known to grow at up to 5,000 feet elevation (1,500 m) and they may reach 30-70 feet (9-21 meters) tall. Its leaves are evergreen and glossy but somewhat leathery. They measure up to 9 inches long (22.5 cm). All parts of the tree contain a sticky, white latex.

The jackfruit tree is monoecious (meaning it has both male and female flowers and can pollinate itself). Because they are so tropical and need humid environments, these trees are not tolerant of drought and they are sensitive to frost. In addition, they need very good drainage. Jackfruit trees may live up to 100 years, but their productivity peaks and then declines with age.

Propagation:

Jackfruit is most commonly propagated by seeds which may last up to 1 month before planting. Germination of the seeds takes 3-8 weeks. To speed up germination soak the seeds in water for 24 hours. According to Morton (1987) if you soak the seeds in a 10% solution of gibberellic acid they result in 100% germination. Additionally, jackfruit has a sensitive tap root, so be sure to take care to transplant it while is  young and to give enough space for the tap root. You can try planting jackfruit seedlings, but will have more consistent or predictable results with varieties that are grafted or air layered.

Abiu taste and how to harvest, store and use pouteria caimito

The taste of abiu is hard to compare to any other fruit you’ve had. It’s kind of got the texture of a grape, but is the size of oblong tennis ball. Read more about this exotic fruit below.

Latin name and family: Pouteria caimito, Sapotaceae

Other names: emperor’s golden fruit, yellow sapote. Trinidad=caimitt or yellow star apple, Colombia=caimo, Ecuador=luma and cauje, Venezuela= temare, Portugal =abieiro, Ghana=alasa.

Characteristics:

The fruits are the size of tennis ball to a baseball, or an average of 2-4 inches. It has a smooth skin, which contains irritating latex when it is still green or under ripe. As it matures the abiu becomes bright yellow. It is either round or slightly elliptical and may have one pointed end. The flesh is like a translucent and white gel. One fruit has up to four brown elliptical seeds that are 1 and 1/2 inches by 1/2 inch.

Abiu Taste and Culinary Uses:

Abiu has succulent, refreshing flesh, which tastes pleasantly sweet. Some people describe it as a mix between maple syrup and caramel. The texture of the pulp is like gel, it is smooth and not grainy (like chico). Although abui has a unique flavor, the flavor is still subtle and may be overpowered by combining it with many ingredients. A little lime juice will bring out the flavor more.  Most people consider abiu best when eaten slightly chilled.  It also has applications for juices, smoothies, ice cream, sorbet etc.

Harvest and Storage:

You can pick abiu while still slightly under ripe to almost bright yellow. Yet, they bruise easily. Thus, they should be put in padded containers when you transport them to markets. Fruits ripen in up to 5 days and have a shelf life of 7-14 days at 40-50° F. Moreover, you should keep the stored fruits out of direct sunlight.

Health benefits:

Abiu fruit is a significant source of calcium, phosphorus, vitamin A, and vitamin C (180% the RDI of Vitamin C). The fruit is rich in vitamins and minerals: thiamine 0.2 mg, riboflavin 0.2 mg, niacin 3.4 mg, Vitamin C 49 mg, calcium 22 mg and iron 1.8 mg. Brazilians use abiu medicinally to help with coughs, bronchitis and other lung complaints.

Growth patterns:

This fruit tree thrives in tropical areas. In Hawaii it will grow up to 3,000 feet elevation. Whereas, in South America it has been known to grow at up to 6,000 feet elevation. These trees grow from 30-120ft tall. Mature trees may produce anywhere from 100-1000 fruits a year. Abiu has multiple bearing times throughout the year.

Abiu is generally propagated by seeds, although grafted varieties ensure less variation. Seeds should be planted as soon as possible. Some people dry the seeds in shaded, open air for a few days and then plant the seeds 2 inches deep. Abiu seeds germinate in 15-20 days and they should be planted 20 feet apart. From fruit set to harvest, the abiu takes around 3 months.

Seedlings produce fruit in as little as 3 years, with a full harvest in 5 years. Young grafted trees used for superior varieties may start bearing in 18 months. Known as a hardy tree, the abiu doesn’t need a lot of attention. However, some people like to give the lower branches a little pruning after about 1 year.

Durian – a rare fruit lovers’ most controversial affinity

 Durian – The King of Fruits is quickly gaining popularity around the world. It is considered at the top of the list for most rare fruit enthusiasts where the tree isn’t native ( in Thailand and Malaysia they are abundant).  These fruits are considered controversial mostly because of their distinct odor when ripe, repelling many people from trying it. It has actually been banned on public transportation in Singapore, and many other places it is banned from hotels, airports, etc.

durian fleshThis controversy over the odor leads the way to its fame. Its texture and taste is separate from its smell, and extremely unique to durian. In Hawaii, these fruits are still considered rare and valuable. On Big Island the going rate is $3 a pound for wholesale and $5 a pound for retail. One fruit may sell for as much as $20.  This is a lot considering only about 20% is edible.

Latin Name and family:

Durio zibethinus (species), Durio Adanso, (genus), Bombacaceae (Kapok-tree family)

Characteristics of Durian:

The durian fruits size and shape varies. In general they can be described as ovoid-oblong and sometimes they are round. They are 6 to 12 inches (15-30 cm) long, and 5 to 6 inches (12.5-15 cm) wide. On average they may be 7-10 pounds but some may weigh up to 20 pounds (8 kg) in weight. They are often described as the size of a US Football. A yellowish-green sometimes brown rind is very thick and is semi-woody. It has sharp spines and for this reason the falling fruits may cause serious injury.

Only up to 25% of the durian is pulp or flesh and 20% is seeds. Inside there are sections with the pulp surrounding the seeds. The flesh color varies from white, yellowish, pale orange or pink. Its texture is creamy, custardy and smooth.

Taste and Culinary Uses:

Durian is probably the world’s most controversial fruit. There is a famous Southeast Asian saying, they are hell on the outside and heaven on the inside.” When they ripe it has an aroma that is often described as rotten onions, low-tide seaweed, sewer pipe, turpentine, decayed onion. But the flavor is much different than the odor. Descriptions of the durian flavor vary and include: a general tropical fruit, garlic, vanilla, almonds, bananas, ice cream. It is not very sweet, or acid or juicy.

The ripe fruit is most often eaten raw, straight from the fruit, and eaten out of your hands. It is best chilled in the refrigerator. Commercial production in some countries includes canned flesh in syrup, durian paste, preserved in salt. It can also be used unripe as a vegetable when cooked, or preserved and salted and used as a relish with rice. In Java, the flesh is prepared as sauce to eat with rice, or turned into a relish. Others may ferment it and even smoke it and prepare as a side dish. The seeds are also edible once they have been boiled, dried and then fried or roasted. Even the rind may be used as an added ingredient in baking.

Buying, Harvesting and Storing Durian:

Durians mature in 3 1/2 to 4 1/2 months from the time of fruit-set. When the fruit is ripe it will fall to the ground. Durian is best harvested this way because it ensures maximum ripeness and flavor. In Thailand they pick durian early and use sprays to help it ripen. However in Malaysia they let it fall to the ground. Many people say that if it has fallen in the last day it is perfect, others relate that a durian left on the ground for about 12 hours improves the flavor.

How to pick out a durian

When you are buying durian, it is important to get one at the ideal stage of ripeness. If it is under-ripe, there will be little flavor, or bad flavor. If it is overripe, it is more likely that it tastes how it smells. Avoid buying durian with these characteristics: 1) a wrinkled stem, 2) discoloration on spikes, splits in the shell, 3) holes in the shell from bugs 4) flesh that is too hard to too soft and runny.

When picking a durian it is important to concentrate on the smell. An under-ripe durian has no smell where an over-ripe durian has a really strong smell. A perfectly ripe fruit will have a lower level earthy but sulfurous smell.

There are also other tricks to picking a good durian that work but vary on the particular variety. A few are: 1) stratch the stem, should be a grass-green color under the brown layer, 2) shake the durian, a ripe durian will rattle a little bit as the flesh recedes, 3) thump or tap with the side of a knife, if it sounds a little hollow it should be edible, 4) scrape fingers or a stick along the spikes, if you hear a sort of hollow reverberation instead of dull sound it is more likely to be ripe.

Durians persish quickly. They ripen 2 to 4 days after falling and are only fit to eat within 5 or 6 days.

Health benefits:

Great source of B Vitamins, such as niacin, riboflavin, B5, B6, and thiamin. A 3.5 oz portion or 100 grams of the raw flesh contains 147 calories and it has 33% daily value of Vitamin C and 31% daily value of Calcium, and 5 grams of fat. Additionally, it is rich in potassium, iron and copper. They also contain thiamin, folic acid and even tryptophan. Moreover, the flesh is reported to an aphrodisiac. There are several reported medicinal benefits of durian: the flesh as a vermifuge (dewormer), the roots and leaves decocted as a fever reducer, medicinal baths with the leaves for people with jaundice, and decoctions of the leaves and fruits are applied to swelling and skin diseases.

Growth patterns:

The tree is tropical and in some countries will not grow above 2,000-2,600 feet). They also need a lot of rainfall. Durian trees may grow 90 to 130 ft (27-40 m) in height in tropical forests. From seed there is usually fruit production in about 12 -15 years. However, grafted trees will grow to be smaller trees and bare fruit in as short as 6-8 years. In the first several years of fruit you can expect anywhere from 10 to 40 fruits.

As they mature (6th or so year of fruiting) this number may possibly jump up to over 100. Because they take so long to fruit from seeds, most people plant grafted trees from good rootstock. The fresh durian seeds are usually only viable for 7-10 days. There are over 300 named varieties in Thailand, in Malaysia there are 100. However only a few are in commercial production. Cross-pollination is recommended for good fruit set.
